As you know by now, at Gobelo, nothing is wasted or without purpose. That’s why our popular saying “use what you have” is always part of what we do. Every plant we grow and every animal we raise has a role to play. The ducks provide meat for our menus while also helping control pests and filling the pond with life. The rabbits bring manure for our gardens. The pigs keep the compost going and just like the ducks, they also find their way onto the restaurant tables as pulled pork, ham and sausages. Even the sheep, who help to entertain visitors during farm tours (everyone loves to pet the sheep and of course meet Putin, our resident kingpin), have always had their place.
But we felt they could do more.
Sheep’s milk has been on our radar for a while now. It’s rich in fat, protein and solids, which makes it perfect for producing cheese with a creamy texture and with a richness you don’t easily get. It’s something we have always wanted to try… a way of adding more value to what the farm already gives us and creating something new to share.
So, we are taking the leap. At the moment, we are in the process of procuring milking equipment and learning everything we can about how to do it properly. Clean, safe handling is important to us and the learning curve has been steep but exciting. There’s so much to discover, from techniques to storage to experimenting with the actual recipes…it is all very new and we are enjoying every moment of figuring it out.
If all goes as planned, Gobelo will soon have its very own sheep’s cheese. It feels like the next step in making sure every corner of the farm connects and contributes to the bigger picture. And of course, we can’t wait for the day when visitors can taste it for themselves and for those who have done this before, to share some recipes as well.
